As we cannot share all of their amazing stories, backgrounds and products one by one, we have decided to take the opportunity to highlight the Festival exhibitors below, for you to get to know them already! Twenty-Four Blackbirds
At Twenty-Four Blackbirds Chocolates we are inspired by traditional chocolate making techniques, and we endeavor to make artisanal confections that are truly hand-crafted. We first source raw, unroasted cocoa beans from single origin estates, growing co-ops, and plantations, and then hand sort to remove any beans that are flawed or otherwise do not meet our strict standards of quality. We then develop roast profiles to accentuate the subtle, and often delicate, flavor characteristics inherent in beans from each origin. Our ingredients are then refined in a traditional stone melangeur, tempered, and molded by hand. We make every effort to use the highest quality ingredients available, and our chocolate, made in Santa Barbara, California, is always prepared in small batches with no emulsifiers or additives.

Caramelz
Het potje Caramel au Beurre salé dat we ooit na een vakantie mee naar huis namen, was al snel leeg. Deze Bretonse specialiteit was toen in Nederland nauwelijks te vinden. Ik ben toen zelf de keuken ingegaan en heb mijn eerste potjes Boeren CaramelZ gemaakt. Dat was in 2012. Inmiddels maak ik deze delicatesse in zo’n twintig smaken.

We started organic cocoa project La Galigo in Sulawesi, Indonesia. The main goal of this project is to improve the livelyhood of cocoafarmers by producing good quality fermented and dried beans organically by implementing organic farming. With these beans the farmers can cater single origine/fine flavour chocolatemakers (direct trade) locally but also internationaly.

In augustus 2009 vond Kees in de Warmoesstraat in Amsterdam dé ideale plek voor een nieuw spannend avontuur: Metropolitan! Hier maakt hij tegenwoordig het lekkerste, verse Italiaans ijs en overheerlijke ‘bean-to-bar’ chocolade van bonen uit de Dominicaanse Republiek. Inmiddels gebruiken verschillende restaurants in Amsterdam, waaronder de Seafoodbar, restaurant Anna en de Tolhuistuin, het verse ijs en de patisserie van Metropolitan voor hun desserts.
