It takes you into the process of the origin of the cocoa beans, making chocolate and the latest business trends. Whether you want to process your own cocoa beans and are a skilled chocolate maker or you simply work with chocolate and looking for inspiration, during this forum there is plenty of potential to learn and share your experiences with others. For the 2018 edition we divided the days into two major slots: All about Cocoa and All about Chocolate.
During the “All about Cocoa” day dove deep into bean sourcing, post-harvesting processes and quality evaluation, to ensure your chocolate bar has the flavour you expect from the terroir!
On our “All about Chocolate” day three hot topics were highlighted to share views and ideas on flavour development and chocolate rheology, economics on the Chocolate Business and marketing and retailing. Understand the challenges and get inspired!
