For the third time in a row, the Chocolatiers Masterclass will be organized, after the grand success of the 2018 and 2019 Masterclasses. For (semi-)professional chocolatiers, patissiers and students it will offer the unique possibility to immerse yourself in an important part of their specialty, chocolate.
If chocolate is not going to be produced in a sustainable way, the production of chocolate will not be secured for the future. Chocoa promotes the sustainable production of chocolate and as a chocolatier, there are many options for couverture to choose from. Which factors influence the choices for couverture? What does sustainability mean in the chocolate industry? Hear all about it during the Chocolatiers Masterclass.
Meet with experts about the newest updates and possibilities;
Subsequently, there is a tour over the Trade Fair, discover many grades of cocoa, also from international award-winning origins. Talk with producers and have a look at the machinery and other services.
To mark the end there is a live cooking demonstration in which different applications of chocolations are discussed. This live cooking demo will be performed by a top chef.

At the Trade Fair, cocoa farmers and cooperations will attend from various countries, such as Venezuela, Peru, Colombia and Ghana. The cocoa beans can be tested, tasted and compared to cocoa from other countries. This way you will learn that cocoa from Ecuador often has an elegant flavour profile, in which flavours of honey, caramel and jasmine appear. Cocoa from Indonesia has an intense and smokey character, with notes of tobacco and dried fruit. Madagascar, on the other hand, is known for its fresh sour flavours. This cocoa can be used for chocolate with red fruit. Producers will tell you more about the origin of their cocoa. Moreover, you will find a diversity of small machinery for the production of chocolate and exhibitors with couverture will tell you exactly how you can apply chocolate to sweet dishes.
