Zoi Papalexandratou holds a MSc in Food Science and Oenology and a PhD that dealt with a study of cocoa bean fermentation processes worldwide. Zoi joined Corporate Xoco in 2011 as Head of R&D and in 2013 she continued as Head of R&D/Post-harvest Manager for Ingemann Fine Cocoa with main focus the unique flavor development in cocoa. In 2015 she co-founded ZOTO – a consultancy company specialized in cocoa-related projects, striving for the production of award-winning beans. Her commitment is to link the chocolate maker with cocoa providers and help making their product a reference in the market.
Clay GordonProfessional chocolate critic
A graduate of the Rhode Island School of Design who has been active in the worlds of chocolate and cocoa since 1994, Clay can credibly claim to be the world’s first professional chocolate critic. He is the founder of chocophile.com and TheChocolateLife.com, and is the author of Discover Chocolate (2007). His work ranges from the farm to the factory to consumer education around the globe.

I am a journalist specialised in Chocolate Tastings in Madrid. I am dedicated to the promotion of fine chocolate consumption. I have developed an “experience” in the form of tasting and organise very fun workshops around chocolate, ideal for companies, bachelorette parties, birthdays and groups. I am part of the ‘Villa y Corte del Chocolate’ Foundation and Technical Advisor of the International Chocolate Show in Madrid.

Korotoum is a senior consultant in sustainable development and specialises in sustainable agriculture. She has more than 15 years experience in the cocoa sector and is competent in undertaking research, assessments, capacity building and training activities. In 2013, Korotoum founded K’Origins aiming to promote sustainable development in mining, agriculture and industry sectors in Cote D ivoire and West Africa. Main acitivties of K’ORIGINS are service providing, lobbying and advocacy, and sustainable agriculture events organisation ( ICC ). K’Origins’ major clients include Tony’s Chocolonely, Hershey’s, GIZ, Mondelez International, UTZ Certified, Fairtrade International, OLAM, Cargill and Barry Callebaut.
